Z is for Zuchinni

Is it really summer time? Okay, maybe not officially but close enough for the produce to start tasting amazing. I pulled the grill pan out and did my first grilling of the new season. A simple zucchini and tomato dish was the result and it tasted amazing.

Grilled Zucchini
2-3 zucchinis (sliced on a slight bias, about a 1/2 thick)
1 tsp. olive oil
Salt & Pepper

Heat grill or grill pan. In a bowl add all ingredients and toss to coat.
Grill each piece of zucchini for about 2-3 minutes per side.

I sliced a perfectly ripe tomato and layered it with my cooking zucchini and also gave it a nice sprinkling of Parmesan cheese.
