Salmon Tostadas

In my adventure of exploring new recipes I can create using canned salmon; I made one of my favorites. We love tostadas at our house. That crunchy tortilla with the re-fried beans slathered on and topped with all the tasty toppings. Can it get much better then that?

Salmon Tostadas
1 Can of Salmon
Re-fried Beans
2 Tablespoons lime juice
1 Medium sized diced tomato
1 Tablespoons chopped onion

1 Tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon ground cumin
Any of your favorite taco toppings:
Sour cream, red onions, cilantro, lettuce, cabbage,
olives, guacamole or anything else you like
Drain and flake salmon. Remove any visible bones and skin. Put salmon in a medium bowl and add lime juice, tomato, onion, olive oil, garlic powder and cumin. Gently mix, trying to not mush the salmon or veggies. Layer on to each tostada re-fried beans, salmon mixture and taco style toppings.
