Vegan Cookies

After trying Trader Joe's Vegan cookies and loving them, DH and I have been on the hunt for another source of great vegan cookies. 

I found this recipe and happened to have all the ingredients at home and decided to give it a whirl.

 The only changes I made were using carob chips instead of chocolate chip and I made a half batch. The recipe was easy peasy and produced tasty cookies. We'll make this recipe again and try using some oatmeal and chopped nuts in them just for fun.

The BEST Vegan Chocolate Chip Cookies
Recipe type: Dessert/Vegan
  • ½ cup coconut oil
  • 1 cup brown sugar
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup vegan chocolate chips (Trader Joe’s chocolate chips are accidentally vegan!)
  1. Pre-heat oven to 350 degrees
  2. Cream together the coconut oil & brown sugar, then add the almond milk & vanilla.
  3. In a separate bowl mix the flour, baking soda, baking powder and salt.
  4. Combine the wet & dry ingredients, then fold in the chocolate morsels & any other mix-ins of your choosing.
  5. Roll into Tbsp sized balls & place them on an ungreased cookie sheet, then flatten them out a bit with your palm. The dough may be a little crumbly, but just smoosh it together and it will work fine!
  6. Bake for 7-10 minutes. (I did 9 which was perfect)
