Grilled Pizza

 The obsession with my grill pan continues. DH and I made grilled pizza's last weekend.


He rolled out the dough and we put it on the grill.


Flipping over once, cooking both sides.


I prepped some toppings. We divided our one pizza dough into 3 mini pizza's. Once the dough was grilled we prepared the pizza's for a quick finish in the oven.


#1 BBQ sauce, grilled chicken, red onions and mozzarella.


#2 Pesto, diced tomatoes, Parmesan cheese and a little mozzarella.

#3 Greek style with herb'd ricotta, red onions, sun dried tomatoes, olives and feta.


When the bbq chicken pizza was done...


We topped it with fresh tomatoes.


So tasty!


And very beautiful!


What a wonderful, grilled pizza meal!

Popcorn Cob


I was at the farmer's market last week and came across some dried corn cobs marked 2 for $1. I had seen them before and wanted to try them out. The corn cobs are dried and then used to make popcorn. Since air popped popcorn is one of my favorite snacks I had to try them out.

Simple to make, you just put the cob in a brown paper bag.

Fold the top over.

Put in the microwave and press the popcorn button and listen for the popping to wind down. Just like a microwave popcorn bag.

Viola! All done.

I was pleased to see  that most of the kernels popped.


And even more pleased that the popcorn was incredibly delicious! I will be purchasing more cobs soon.

A Little Baking

I rarely bake anymore. It seems like DH and I are always watching what we eat so closely that there is no room for sugar.  After returning from our latest adventure away from home, DH said he didn't care as much about what he ate. To me that meant baking! So I whipped up a batch of his favorite chocolate chip cookies the other night.


 As you can see in this picture I baked 2 of the cookies in mini pie pans. 


Then I filled it with frozen, vanilla yogurt and topped with crushed peanut M&M's. DH was in heaven and loved his sweet treats.

Fourth of July

In honor of the 4th of July I made huevos rancheros for breakfast with a red, white and blue theme.


My New Addiction

I have a new addiction in my life. My dear mother-in-law gave me a heavy-duty grill pan when we were in Spokane visiting her. I haven't stopped using it yet. It makes any food taste great. The first time I used it I grilled chicken and DH said he had never tasted anything so good. That of course helped motivate me to grill even more. Here are a few items I have grilled so far.


Grilled Potatoes, Tilapia and Salmon

 Grilled Potatoes
I sliced the potatoes and par-boiled them in water with vinegar. Once the were near tender I drained them and dried them, spiced them up and grilled them.

 Grilled Corn on the Cob
Seasoned with chili powder.

 Grilled Salmon and Tilapia
Seasoned with lemon pepper.



 Grilled Broccoli and Chicken

 I love grilled broccoli. After it was grilled I tossed it with a mixture of lemon juice, a touch of olive oil and a bit of anchovy paste for a nutty taste. Then sprinkled with Parmesan cheese. It's my favorite way to enjoy it grilled.


I brushed the grilled chicken with bbq sauce and the corn was sprinkled with chili powder and a squeeze of lime juice.


Grilled Turkey Burger and Green Beans
The green beans were tossed with garlic, salt and pepper. They were very crunchy so next time I think I will par-boil them before grilling.


Grilled Peaches and Nectarines
Sprinkled with cinnamon and served with a scoop of vanilla, frozen yogurt.

Grilled Tofu

 To Die For! I marinated it in an Asian style salad dressing and then basted it with that dressing while grilling.

 I sprinkled it with sesame seeds for an added crunch.

 Grilled Tilapia
Using my favorite seasoning mixture at this time, I sprinkled the fish with chili powder, mustard powder and turmeric before grilling.
