Weekdays This Week

I love food. I love reading about the nutrition of food, cooking healthy food and plating beautiful food. I strive in my life to make the food I cook look as good as it tastes. This gave me an idea. This week I decided to take pictures of the food I cook. My menu plan is strictly designed around what produce is on sale that week and what my body seems to be craving. Here is this past weeks photo food log.

Monday Breakfast: Tofu Scramble

I make this for breakfast about 4 times a week. I cook crumbled tofu with turmeric, saute red onions, spinach, toast and tear a corn tortilla and mix with a scoop of salsa.



Monday: Stir-Fry with Pearl Rice

I made a stir-fry with cubed tofu, red pepper strips, asparagus, onions and sweet potatoes topped with sesame seeds and served with steamed rice. I seasoned the stir-fry with soy sauce, rice vinegar, freshly grated ginger and garlic.



Tuesday: Baked Chicken, Quinoa and Roasted Veggies

I made baked chicken breasts seasoned with thyme, garlic powder, paprika and salt and pepper. Onion sauteed quinoa and a variety of roasted veggies: red peppers, asparagus, sweet potatoes, garlic and onions. I served the chicken on the roasted red peppers and sprinkled them with herbed feta cheese and diced, roasted, red peppers.



Wednesday Breakfast: Whole Wheat Waffles w/ Flax Seed, Cinnamon, Blueberries and Diced Strawberries

I made my stand by waffle recipe (1/4 whole wheat flour, 1/4 cup water, 1/8 tsp. baking soda and instead of one egg white I used 2 tsp. of ground flax seed with 2 tablespoons of water) added cinnamon and blueberries to the mix and then topped cooked waffles with fresh diced strawberries. 



Wednesday: Dijon Salmon, Mashed Cauliflower and Spinach

I made salmon fillets, brushed with mustard, seasoned with salt and pepper and topped lightly with panko. Steamed cauliflower with cloves of garlic and pureed with garlic powder, thyme, 1 tablespoon sour cream, and a bit of chicken broth. The spinach was sauteed with garlic then seasoned with a pinch of nutmeg and a drizzle of balsamic vinegar.



Thursday: Tomatillo Enchiladas with Black Beans

I made my favorite homemade tomatillo salsa recipe an used it in a great enchilada recipe. The salsa has roasted tomatillos, onions, garlic and jalapenos mixed with freshly squeezed lime juice, cumin and cilantro. Served with some black beans I made with tomatoe flavorings, oregano and lots of garlic.



Friday: Split Pea Soup

I made my favorite LionHouse Lite's recipe for split pea soup. Friday dinner is always light around here, I usually try to make something with left overs to it for weekend meals in a jiffy. 


This is my week of food. I had a great time logging this in photo format, so I may just do it again real soon.
