Tomato Napoleon Pizza

My husband is a great cook (and great looking too :). With me being sick so much lately, he has had to fend for himself. He created this pizza with the help of inspiration from our last trip to Mexico.

DH's Tomato Napoleon Pizza


DH rolled out the pizza dough on a floured surface.


Pre-heated the oven to 450 and fit dough onto a pizza pan. Put the pizza dough in the oven for a few minutes until warmed. 


Remove dough from the oven and spread goat cheese on the crust. 


Drizzle with olive oil.


Sprinkle with herbs, he used thyme and basil


Top with chopped, fresh, Roma tomatoes.


Top with fresh spinach leaves.


Top with diced, roasted, red peppers.


Add mozzarella cheese and return to oven. 


Cook until the crust is golden brown and the mozzarella cheese is melted. 


Drizzle with a bit more olive oil.


Top warm pizza with diced avocado pieces.


Drizzle with balsamic vinegar.


Slice pizza and Enjoy!
