Delicious Fall Day Chili


Ingredients

  • 5 vine ripened tomatoes (chopped) or 2 cans of diced tomatoes
  • 5 cloves of garlic (minced)
  • 1 medium onion (chopped)
  • 1/2 pound ground turkey burger (optional)
  • 3 jalapeno peppers (chopped) (devein all 3, seed 2)
  • 2 large Anaheim peppers (chopped)
  • 2 bottles of Pale Ale or 2 cups of chicken broth
  • 2 cans of Kidney Beans
  • 2 cans of Chili Beans
  • 2 cans of Black Beans
  • ½ TB Coriander
  • 1 TB Ancho Chili Pepper
  • 1 Tsp Salt
  • 1 Tsp Cumin
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder

  • In a large pot, sweat onions in evoo.
  • Add garlic, cook for one minute and add burger to pot (is using). 
  • Brown meat (If using) and then add chopped tomatoes, cook tomatoes down (about 10 minutes). 
  • Pour in beer or broth, add peppers and spices and simmer for 10 minutes.
  • Drain the kidney and black beans add to pot along with chili beans.
  • Cook until desired consistency, from 20-45 minutes.
  • If chili becomes too thick while cooking, water or more ale may be added.
  • Serve with fresh chopped avocado and grated cheese if desired.
